Protein Lemon Bars

Lemony Sweet

Approximately 19.4 million tonnes of lemons are produced each year. After trying this recipe, that might not be enough to keep up with how much you’re going to want to snack on this bar! With 10 grams of protein in a serving, it makes for a perfect snack and is filling! With this lemon bar, you have the option to make it as strong or light lemon tasty as you want!



Grocery List

  • 1 cup oat flour

  • 2 scoops of vanilla protein powder

  • ¼ tsp salt

  • ½ tsp of baking soda

  • 5-6 ounces of lemon juice (preferably freshly squeezed lemons.)

  • 4 egg whites

  • ⅓ cup of stevia in the raw

  • 8 ounces of applesauce

  • ⅓ cup of plain greek yogurt

  • ¾ tsp of powdered sugar

  • ¾ tsp of organic honey


Instructions


For Bars:

  1. Preheat the oven to 350 degrees.

  2. Mix the oat flour, vanilla protein powder, salt, and baking soda in a large mixing bowl.

  3. In a separate smaller mixing bowl, mix 4 ounces (½ cup) of the lemon juice, egg whites, stevia in the raw, and applesauce.

  4. Now, combine the small mixing bowl ingredients into the larger mixing bowl.

  5. Spray an 8x8 dish with nonstick spray and pour in the batter.

  6. Bake for 25 minutes in the oven.

  7. Pull out and let cool for about 10 minutes.

For Lemon Topping:

  1. Mix together in a small bowl the plain greek yogurt, powdered sugar, organic honey, and ½ of lemon for its juice.

  2. Mix thoroughly and top evenly on bars. Enjoy!
