Stuffed peppers are a classic, and this recipe takes the basic stuffed pepper to a new level of deliciousness. We infused all the Italian flavors to create a simple, easy, and nutritious dinner!

What's Needed:
Bell Peppers
We prefer the sweeter ones like red, orange, or yellow peppers
Mushrooms
We like to pulse the mushrooms in a blender for a few seconds

Ground Italian pork sausage
Quinoa
Could also use rice, riced cauliflower, or a blend

Tomato sauce
We used a jarred tomato basil pasta sauce, but you can also make a homemade tomato sauce or just use a can of diced tomatoes
