Cali Goes Greek!
Who else loves a cobb salad?!
A delicious fusion salad coming right up!
For this recipe, we've taken the elements of a traditional cobb salad and turned it Greek! This Greek cobb is refreshing, loaded with the goods, and embodies the heart of a cobb salad with a Greek flare.
A salad is more than a pile of lettuce. A good salad has substance, it should fuel you, and keep you feeling full. A salad should have appeal, from the colors to the textures, a good salad should look and be delicious.
Let's Break it Down:
Traditional Cobb Salad:
Lettuce
Tomatoes
Bacon
Chicken
Hard-boiled eggs
Avocado
Blue cheese
Chives
Greek Cobb Salad:
Lettuce
Tomatoes
Chickpeas
Want to jazz just your chickpeas? Season and roast the chickpeas in the oven for added deliciousness!
Bacon
Hard-boiled eggs
Avocado
Feta
Onions
Any onion will do, we decided to use white onions and ended up sauteeing them in this version, but raw works really well.
Here is a recipe where we simply eye-balled all the ingredients, it's just more fun that way! As far as dressing goes, a traditional cobb salad will use a red wine vinaigrette, but for this recipe, we used a store-bought lemon garlic vinaigrette. You could also use a red wine vinaigrette or a greek dressing.
