Cheesy Beefy Noodle Casserole

When in doubt, make a casserole!

It's cheesy, it's beefy, and it's just darn delicious! Casseroles have become a Linked Fit staple. In simple terms, this one-pot dish can consist of a combination of veggies, starches, proteins, and sauces.

Let's Put it Together!


In this recipe, we spend a little more time making our sauce, but you can bypass a few steps and use a premade sauce to save on time. You can change up the veggies in this recipe as well. If from scratch, we do prefer sauteing the veggies before putting them in the oven as part of the casserole to help soften them. In reality, if everything is prepped ahead of time or you have leftovers from previous days this recipe really only takes 20 minutes and most of that time is spent in the oven! 5 minutes to pull everything out and place in a casserole dish and 15 to bake. Even if you are making everything the day of and follow the steps below, this recipe can be done in 30-40 minutes.


What's Needed:

  • Ground beef

  • Onion

  • Carrots

  • Cauliflower (riced)

  • Macaroni noodles

  • Seasonings: salt, pepper, garlic, paprika, Italian

  • Unsalted butter

  • GF flour

  • Beef or veggie broth

  • Shredded cheese

  • Parmesan cheese

  • Breadcrumbs


Steps:

  • Preheat oven to 400 degrees F

  • If noodles are not precooked, bring a pot with water to a boil

  • Boil noodles until al dente

  • Strain water from noodles, set noodles aside in a lined or greased casserole pan

  • Saute onions and carrots over medium heat with a little olive oil

  • Add beef to the same pan, season, and brown

  • As beef is finishing browning, add riced cauliflower and turn heat off

  • To make the sauce use the same pan from the noodles and start to melt the butter

  • Add flour, mix until a roux is formed over medium to low heat

  • Slowly add broth, mix with roux

  • Add any additional seasonings

  • Finally, add the cheese and mix, turn heat off

  • Add beef mixture to the sauce and mix

  • Pour sauce over noodles

  • Top with a mixture of breadcrumbs and parmesan cheese

  • Bake for about 15 minutes
