Winner Winner Chicken Fritters for Dinner!
This is a fun and creative way to change up your chicken dinner! These chicken fritters are perfect for meal prepping, easy to put together, the kids will love them, and so will you. We've taken simple kitchen and pantry ingredients and turned them into a delicious bite-sized meal. Serve these fritters as an appetizer or part of your main course, just make sure to dip them in your favorite dipping sauce and you are good to go!
What's Needed:
Chicken breast
Eggs
Mayo
GF flour
Shredded cheese
Seasonings
Parsley
Garlic powder
Salt
Pepper
Olive oil
Put it Together:
Start by dicing your chicken into bite-sized pieces. The smaller the pieces the better!
In a mixing bowl, add your diced chicken and all remaining ingredients, except the olive oil.
Mix together.
Using a 1/4 measuring cup, scoop out the meat mixture and place them on a lightly greased baking sheet pan. Lightly drizzle olive oil on the top of the fritters. We love being eco-friendly and using our reusable silicone baking sheets.
We chose to bake the fritters versus frying, but you can pan fry them in about 2 tbsp of olive oil for about 5 to 8 minutes per side or until golden brown and fully cooked through. Cook time will depend on the size of the fritters. If you are pan-frying, use low/medium heat and don't overcrowd your pan. Low/medium heat will help prevent the fritters from burning.
Bake in the oven for about 30 minutes at 400 degrees F. You can leave them as is or flip halfway through. If you want to have well-rounded and crisped fritters it's best to flip halfway through.
This recipe should make about 8 medium-sized fritters. If pan-frying, we recommend making the fritters smaller in size and don't overcrowd the pan.
Substitutions:
Chicken: Have leftover chicken? Use precooked chicken diced or shredded instead. You can also use different cuts of chicken, like chicken thighs.
Mayo: Try this recipe with plain Greek yogurt or sour cream.
GF flour: Of course, if you are not GF you can use regular all-purpose flour, but if you are GF, try almond flour or corn starch. We use Bob's Red Mills for our various flour needs!
Seasonings: You can also use Italian seasonings, dill, chives, basil, and thyme. Ultimitely, you can use any seasoning combination you'd like.
Cheese: For this recipe, we generally will either use cheddar cheese or mozzarella, but also try parmesan or feta, or a combination of cheeses.
Add-ins: You can add various veggies to your fritters like onions, spinach, and peppers. You could also add bread crumbs to help with binding.
Serve it Up:
Serve with your favorite chicken dipping sauce.
Aioli
Yogurt sauce
Ranch
Buffalo sauce

Sample Combinations:
Mediterranean Chicken Fritters: Greek yogurt, feta, dill, and lemon
Italian Chicken Fritters: Mayo, parmesan, Italian seasonings, and spinach or basil
Mexican Chicken Fritters: Taco seasonings, sour cream, cheddar cheese, peppers
Ranch Chicken Fritters: Sour cream, cheddar cheese, and dry ranch packet
Note: You will still need to use the eggs and flour to help bind all the ingredients in the above combinations, but get creative with your fritters!
Storage:
Store leftover chicken fritters in an air-tight container in the fridge for 4 to 5 days.
Reheat chicken fritters in the microwave or the stovetop with a non-stick pan.
