Whip it, Fluff it, Eat it!
Okay, this dessert has it all!
No baking is required.
It is easy to put together.
It has simple ingredients that pair really well together.
The best part is the deliciousness!
But really, this dessert embodies spring, it's light, colorful, refreshing, and can be served at any gathering. It might be wise to double the recipe, it's going to go fast!
What's Needed:
1 package of softened cream cheese (8 oz)
1 dry packet of cream cheese pudding (3.4 oz) or vanilla
1 cup of milk of choice
1 tub cool whip (8 to 12 oz)
Store-bought or homemade
1.5 cups mini marshmallows
About 1 cup of blueberries
About 2 cups of strawberries
Optional berries: blackberries or raspberries
Optional: gluten-free graham crackers to crumble on top before serving (highly recommended)
Put it together:
Start out by creaming the cream cheese, pudding packet, and milk together.
Careful, this can get a little messy!
Use some kind of hand or standing mixer to combine the three ingredients together. Could use a fork or a whisk but it's a bit more labor-intensive.
The main thing is to make sure there are no chunks or clumps.
Fold in the cool whip.
Finally, fold in the mini marshmallows, strawberries, and blueberries.
Spread the fluff around a serving dish of your choice.
If you are using the GF graham crackers, place them in a ziplock baggie and crumble them to your desired size (we prefer chunkier crumbles), then sprinkle the crumbles on top of the fluff. You could also use a premade GF pie crust.
Serve the fluff right away or chill it in the fridge until ready to eat. Would wait no longer than 24 hours before serving.
Variations:
Feel free to try this recipe with different fruits or add-in combinations. The options are really endless!
If you want a lower fat content substitute cream cheese for Greek yogurt. You'll want to use about 2 cups of yogurt, plain or flavored.
You could also add a scoop of protein powder if you are looking to add more protein.
For this recipe, we prefer mixing the dry pudding mix with 1 cup of milk, but you technically can omit the milk or use even use less milk.
Lastly, if you didn't have a pudding packet for added flavor you could add white or powdered sugar.
